Artichokes

To steam: To keep artichokes upright in your pan, place the band from canning lids on the bottom and place the artichokes on top.

To maintain the green color of artichokes, add lemon juice to the water before boiling.

Lemon Juice

Get more juice: select a lemon with a thin skin.  Before juicing, put the whole lemon in the microwave for about 15 seconds, and you might even double the amount of juice you get.  If you don’t have a microwave, submerging your lemon in hot water for 15 minutes before squeezing will yield much more juice.

Storing: Never waste that extra lemon juice.  Store it in your ice cube trays and freeze.

Lemons

Storing: Lemons will actually keep for up to 3 months if you store them in the refrigerator in a bowl of water.

When Squeezing: wrap a small piece of cheesecloth around the cut end of a lemon before you squeeze. You won’t have to search for the seeds in your bowl.
